  • Author: Chef Lalybeth
  • Total Time: 35 minutes
  • Yield: 6 1x

Description

A creamy, low-carb soup loaded with cheeseburger flavors like ground beef, cheese, and bacon, without the bun guilt.

Ingredients

Scale
  • 1 lb ground beef
  • 8 oz bacon, cooked and crumbled
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tsp Worcestershire sauce (optional)
  • Salt and pepper to taste
  • Optional toppings: extra cheese, bacon, or sour cream

Instructions

  1. In a large pot or Dutch oven, cook the bacon until crispy. Remove and set aside, leaving the grease in the pot.
  2. Add the ground beef to the pot and cook over medium heat until browned. Drain excess fat if needed.
  3. Add the diced onion and garlic to the pot. Cook for 2-3 minutes until softened.
  4. Pour in the beef broth and bring to a simmer.
  5. Stir in the heavy cream and shredded cheese until melted and smooth.
  6. Mix in the Worcestershire sauce if using, then season with salt and pepper.
  7. Crumble the cooked bacon and stir it in.
  8. Simmer for 5-10 minutes to let flavors meld.
  9. Serve hot, topped with extra cheese, bacon, or sour cream if desired.

Notes

This soup is dairy-rich and low in carbs, perfect for keto diets. Adjust seasonings to taste. Store leftovers in the fridge for up to 3 days.
