- 1 pound ground beef
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
- Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
- Add the broken lasagna noodles to the pot and cook until al dente, about 10 minutes.
- In a small bowl, mix the ricotta and Parmesan cheese. Serve the soup topped with a dollop of the cheese mixture and season with salt and pepper.
Notes
For a vegetarian version, substitute ground beef with plant-based meat or mushrooms. Leftovers can be stored in the fridge for up to 3 days.
