Easy Lemon Garlic Butter Shrimp and Spinach Tortellini

A creamy and flavorful dish combining succulent shrimp, fresh spinach, and cheese-filled tortellini in a lemon garlic butter sauce.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 9 oz cheese-filled tortellini
  • 2 cups fresh spinach
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, add spinach and cook until wilted. Stir in heavy cream, lemon juice, red pepper flakes, salt, and pepper.
  5. Return the shrimp and tortellini to the skillet. Toss to coat in the sauce and heat through.
  6. Sprinkle with Parmesan cheese before serving.

Notes

You can customize the seasonings to taste.
