Ingredients

- 2 cups all-purpose flour
- 1 cup grated zucchini
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons fresh lemon juice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Zest of 1 lemon
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat eggs, sugar, oil, lemon juice, and lemon zest until well combined.
- Stir in grated zucchini.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days. For extra moisture, wrap in plastic after cooling.
