Easy Lemon Zucchini Bread

Description

A moist and delicious bread combining fresh lemon and zucchini for a perfect treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup grated zucchini
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, oil, lemon juice, and lemon zest until well combined.
  4. Stir in grated zucchini.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days. For extra moisture, wrap in plastic after cooling.
