For the Crust:
- 4 haddock fillets (about 6 oz each)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh thyme leaves
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 lemon, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Pat the haddock fillets dry and place them in the prepared baking dish.
- In a small bowl, mix together the olive oil, minced garlic, thyme, lemon zest, salt, pepper, and paprika.
- Brush the mixture evenly over the haddock fillets.
- Bake for 20-25 minutes, or until the fish flakes easily with a fork.
- Garnish with lemon slices and chopped parsley before serving.
