Description

These mini cheesecakes are a simple, no-bake treat featuring fresh strawberries and bananas, perfect for a quick dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • 1 cup fresh strawberries, chopped
  • 1/2 cup whipped cream for topping

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until combined.
  2. Press the mixture into the bottom of mini cheesecake molds or cups.
  3. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Fold in sliced bananas and chopped strawberries gently.
  5. Spoon the cream cheese mixture over the crust in the molds.
  6. Refrigerate for at least 2 hours or until set.
  7. Top with whipped cream before serving.

Notes

For best results, use ripe bananas and fresh strawberries. Store in the refrigerator for up to 3 days.
