- 8 oz mascarpone cheese, softened
- 1 cup finely crushed ladyfingers
- 1/2 cup powdered sugar
- 2 tbsp instant coffee powder
- 1 tsp vanilla extract
- For coating:
- 8 oz dark chocolate, melted
- 1/4 cup cocoa powder, for dusting
Instructions
- In a large bowl, mix together the mascarpone cheese, crushed ladyfingers, powdered sugar, instant coffee powder, and vanilla extract until well combined.
- Refrigerate the mixture for 30 minutes to firm up.
- Roll the mixture into small balls (about 1 inch each) and place on a parchment-lined tray.
- Dip each ball into the melted chocolate and return to the tray.
- Dust with cocoa powder and refrigerate for at least 1 hour before serving.
Notes
These truffles are best served chilled. Can be made ahead and stored in the fridge for up to 3 days.
