Easy Pineapple Chicken Stir-Fry

A sweet and savory stir-fry with tender chicken, fresh vegetables, and juicy pineapple chunks.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and no longer pink, about 5-6 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic, ginger, bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. Return chicken to the skillet. Add pineapple chunks, soy sauce, honey, and red pepper flakes. Stir well to combine.
  5. Cook for another 2-3 minutes until everything is heated through and sauce thickens slightly.

Notes

You can customize the seasonings to taste.
