A sweet and savory stir-fry with tender chicken, fresh vegetables, and juicy pineapple chunks.

For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp vegetable oil
- 1 tsp ginger, grated
- 1/2 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Heat oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and no longer pink, about 5-6 minutes. Remove from skillet and set aside.
- In the same skillet, add garlic, ginger, bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Return chicken to the skillet. Add pineapple chunks, soy sauce, honey, and red pepper flakes. Stir well to combine.
- Cook for another 2-3 minutes until everything is heated through and sauce thickens slightly.
