  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup sweetened shredded coconut
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the crushed pineapple (with juice), shredded coconut, vegetable oil, eggs, and vanilla extract to the dry ingredients. Stir until just combined.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
