- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/2 cup raspberry jam
Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually add the flour and vanilla extract, mixing until a dough forms.
- Roll out the dough on a floured surface and spread the raspberry jam evenly over it.
- Roll up the dough into a log and chill in the refrigerator for 1 hour.
- Preheat oven to 350Β°F (175Β°C). Slice the log into 1/4-inch cookies and place on a baking sheet.
- Bake for 10-12 minutes or until edges are golden. Cool on a wire rack.
Notes
For a stronger raspberry flavor, use fresh raspberry puree instead of jam. Store cookies in an airtight container for up to a week.
