Description

These delightful shortbread cookies feature a beautiful raspberry swirl, making them a perfect, easy dessert for parties and gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Gradually add the flour and vanilla extract, mixing until a dough forms.
  3. Roll out the dough on a floured surface and spread the raspberry jam evenly over it.
  4. Roll up the dough into a log and chill in the refrigerator for 1 hour.
  5. Preheat oven to 350Β°F (175Β°C). Slice the log into 1/4-inch cookies and place on a baking sheet.
  6. Bake for 10-12 minutes or until edges are golden. Cool on a wire rack.

Notes

For a stronger raspberry flavor, use fresh raspberry puree instead of jam. Store cookies in an airtight container for up to a week.
