Description
These easy salmon balls are made with canned salmon, mixed with breadcrumbs and herbs, then baked until golden. Served with a creamy avocado sauce for a fresh, healthy twist.

- 2 cans (14.75 oz each) of salmon, drained and flaked
- 1 large egg
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- For the sauce: 2 ripe avocados
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon cumin
Instructions
- Preheat oven to 375Β°F and line a baking sheet with parchment paper.
- In a large bowl, combine salmon, egg, breadcrumbs, onion, parsley, garlic powder, salt, and pepper. Mix until well combined.
- Form the mixture into small balls, about 1 inch in diameter, and place on the prepared baking sheet.
- Bake for 20 minutes, or until golden and cooked through.
- While the balls are baking, prepare the sauce: In a blender, combine avocados, Greek yogurt, lime juice, and cumin. Blend until smooth.
- Serve the salmon balls hot with the creamy avocado sauce on the side.
Notes
For a spicier version, add chopped jalapeΓ±o to the sauce. Store leftovers in an airtight container in the fridge for up to 2 days.
