Easy Salmon Balls with Creamy Avocado Sauce

Description

These easy salmon balls are made with canned salmon, mixed with breadcrumbs and herbs, then baked until golden. Served with a creamy avocado sauce for a fresh, healthy twist.


Ingredients

  • 2 cans (14.75 oz each) of salmon, drained and flaked
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the sauce: 2 ripe avocados
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin

Instructions

  1. Preheat oven to 375Β°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine salmon, egg, breadcrumbs, onion, parsley, garlic powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into small balls, about 1 inch in diameter, and place on the prepared baking sheet.
  4. Bake for 20 minutes, or until golden and cooked through.
  5. While the balls are baking, prepare the sauce: In a blender, combine avocados, Greek yogurt, lime juice, and cumin. Blend until smooth.
  6. Serve the salmon balls hot with the creamy avocado sauce on the side.

Notes

For a spicier version, add chopped jalapeΓ±o to the sauce. Store leftovers in an airtight container in the fridge for up to 2 days.
