Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup white vinegar
  • 1/2 cup olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • Salt to taste

Instructions

  1. Bring a pot of salted water to a boil and add the shrimp. Cook for 2-3 minutes until shrimp are pink and opaque, then drain and let cool.
  2. In a large bowl, combine vinegar, olive oil, onion, garlic, mustard seeds, peppercorns, and bay leaf.
  3. Add the cooled shrimp to the mixture and stir to coat evenly.
  4. Cover and refrigerate for at least 4 hours or overnight for best flavor.
  5. Serve chilled as an appetizer.

Notes

For a spicier version, add sliced jalapeΓ±os or red pepper flakes. Store in an airtight container in the refrigerator for up to 5 days.
