- 1 pound fresh shrimp, peeled and deveined
- 1 cup white vinegar
- 1/2 cup olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 1 bay leaf
- Salt to taste
Instructions
- Bring a pot of salted water to a boil and add the shrimp. Cook for 2-3 minutes until shrimp are pink and opaque, then drain and let cool.
- In a large bowl, combine vinegar, olive oil, onion, garlic, mustard seeds, peppercorns, and bay leaf.
- Add the cooled shrimp to the mixture and stir to coat evenly.
- Cover and refrigerate for at least 4 hours or overnight for best flavor.
- Serve chilled as an appetizer.
Notes
For a spicier version, add sliced jalapeΓ±os or red pepper flakes. Store in an airtight container in the refrigerator for up to 5 days.
