Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 1 lb chicken breast, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Fresh cilantro for garnish
  • Red chili flakes to taste

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger; sauté until fragrant, about 2-3 minutes.
  3. Add bell pepper and cook for another 2 minutes.
  4. Pour in chicken broth and coconut milk; bring to a boil.
  5. Add chicken slices and simmer until cooked through, about 10 minutes.
  6. Stir in fish sauce, lime juice, and sugar.
  7. Adjust seasoning and simmer for 5 more minutes.
  8. Garnish with cilantro and chili flakes before serving.

Notes

For a spicier version, add more chili flakes. Ensure chicken is fully cooked.
