- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 1 lb chicken breast, sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon sugar
- Fresh cilantro for garnish
- Red chili flakes to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and ginger; sauté until fragrant, about 2-3 minutes.
- Add bell pepper and cook for another 2 minutes.
- Pour in chicken broth and coconut milk; bring to a boil.
- Add chicken slices and simmer until cooked through, about 10 minutes.
- Stir in fish sauce, lime juice, and sugar.
- Adjust seasoning and simmer for 5 more minutes.
- Garnish with cilantro and chili flakes before serving.
Notes
For a spicier version, add more chili flakes. Ensure chicken is fully cooked.
