- 1 pound boneless chicken thighs, cut into bite-sized pieces
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
Instructions
- In a large pot, heat oil over medium heat and sauté garlic and ginger for 1 minute.
- Add red curry paste and stir for another minute until fragrant.
- Add chicken pieces and cook until browned, about 5 minutes.
- Pour in chicken broth and coconut milk, then bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add bell pepper, mushrooms, fish sauce, and lime juice; simmer for another 10 minutes.
- Stir in cilantro and season with salt.
- Serve hot in bowls.
Notes
For a spicier version, add more red curry paste or fresh chili. This soup pairs well with rice.
