Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a large pot, heat oil over medium heat and sauté garlic and ginger for 1 minute.
  2. Add red curry paste and stir for another minute until fragrant.
  3. Add chicken pieces and cook until browned, about 5 minutes.
  4. Pour in chicken broth and coconut milk, then bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add bell pepper, mushrooms, fish sauce, and lime juice; simmer for another 10 minutes.
  7. Stir in cilantro and season with salt.
  8. Serve hot in bowls.

Notes

For a spicier version, add more red curry paste or fresh chili. This soup pairs well with rice.
