Description

A refreshing and healthy salad featuring grilled chicken mixed with creamy tzatziki sauce, cucumbers, and fresh herbs.


Ingredients

  • 2 cups grilled chicken breast, shredded
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon juice from 1 lemon

Instructions

  1. In a large bowl, combine the Greek yogurt, minced garlic, chopped dill, olive oil, lemon juice, salt, and pepper to make the tzatziki sauce.
  2. Add the shredded grilled chicken and diced cucumber to the sauce and mix well.
  3. Refrigerate for at least 30 minutes to let the flavors meld.
  4. Serve chilled, garnished with extra dill if desired.

Notes

For a lighter version, use low-fat Greek yogurt. This salad pairs well with pita bread.
