- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- For the filling: 2 cups fresh strawberries, hulled and chopped
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 350Β°F (175Β°C) and grease a muffin tin.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Scoop the dough into the muffin tin, pressing it down to form cups.
- Bake for 10-12 minutes or until edges are golden.
- Allow to cool, then fill each cup with chopped strawberries and a dollop of strawberry jam.
Notes
Store in an airtight container for up to 3 days. For best results, use ripe strawberries.
