Delicious sugar cookie cups filled with fresh strawberries, perfect for a sweet treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the filling: 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and grease a muffin tin.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Scoop the dough into the muffin tin, pressing it down to form cups.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Allow to cool, then fill each cup with chopped strawberries and a dollop of strawberry jam.

Notes

Store in an airtight container for up to 3 days. For best results, use ripe strawberries.
