For the Crust:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup red and green Christmas M&M’s
  • 3/4 cup white chocolate chips
  • 1/2 cup crushed candy canes (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and peppermint extracts.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in the Christmas M&M’s and white chocolate chips until evenly distributed throughout the dough.
  5. Press the dough evenly into the prepared baking pan. Sprinkle the crushed candy canes over the top and press them down lightly.
  6. Bake for 25-30 minutes, or until the edges are golden brown and the center is set. Allow the bars to cool completely in the pan on a wire rack before slicing into squares.
