For the Crust:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon peppermint extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup red and green Christmas M&M’s
- 3/4 cup white chocolate chips
- 1/2 cup crushed candy canes (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving an overhang for easy removal.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and peppermint extracts.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the Christmas M&M’s and white chocolate chips until evenly distributed throughout the dough.
- Press the dough evenly into the prepared baking pan. Sprinkle the crushed candy canes over the top and press them down lightly.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set. Allow the bars to cool completely in the pan on a wire rack before slicing into squares.
