Juicy chicken meatballs stuffed with feta cheese, served with a creamy roasted garlic tzatziki sauce, perfect for a Greek-inspired meal.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1/4 cup breadcrumbs
  • For the tzatziki: 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 roasted garlic cloves, mashed
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400Β°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, feta cheese, parsley, mint, minced garlic, oregano, salt, pepper, egg, and breadcrumbs. Mix until just combined.
  3. Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  5. While the meatballs bake, prepare the tzatziki: In a bowl, mix Greek yogurt, grated cucumber, mashed roasted garlic, lemon juice, salt, and pepper.
  6. Serve the meatballs hot with the roasted garlic tzatziki on the side.

Notes

For the best flavor, use freshly roasted garlic in the tzatziki. These meatballs can be made ahead and reheated.
