Description
These spicy Firecracker Ground Chicken Bowls are a delicious and easy weeknight dinner! Made with ground chicken, vegetables, and a spicy sauce, they’re low carb, healthy, and so flavorful! Ready in under 30 minutes, this flavorful dinner is perfect for meal prep and a great way to spice up your ordinary dinner routine!

- 1 lb ground chicken
- 1 tbsp olive oil
- Β½ cup diced yellow onion
- Β½ cup diced red bell pepper
- 2–3 bunches green onions chopped and divided (use only the light green and white parts for the dish, save the rest for topping)
- 3 garlic cloves minced
- 1 tbsp fresh ginger minced
- Β½ cup beef or chicken bone broth
- 1 tbsp sesame oil
- 1 tbsp coconut aminos
- 2 tbsp Thai sweet chili sauce
- 2 tsp fresh lime juice
- 1 tsp Chinese 5 spice powder (or pumpkin pie spice)
- 1 tsp crushed red pepper flakes
- Salt and pepper to taste
- 2 cups riced cauliflower or steamed rice for serving
- Hot sauce optional, for serving
- Sesame seeds optional, for garnish
Instructions
- Heat a large non-stick skillet over medium high heat and add the olive oil. Once the skillet is hot, add the ground chicken and cook, breaking it up with a spatula as it cooks, until it's fully cooked and browned, about 5-7 minutes. Season with salt and pepper and mix well.
- While the chicken is cooking, mix the sauce ingredients together in a small bowl: bone broth, sesame oil, coconut aminos, Thai sweet chili sauce, lime juice, Chinese 5 spice powder, crushed red pepper flakes. Stir well and set aside.
- Add the diced onion, red bell pepper, garlic, ginger and Β½ of the chopped green onions to the skillet with the chicken. Cook, stirring frequently, for 5 minutes, until the vegetables have softened.
- Pour the sauce into the skillet with the chicken and vegetables. Stir well and cook for another 3-4 minutes, stirring frequently, until the sauce has thickened slightly. Taste and add more salt, pepper, and heat if needed.
- Scoop the mixture over riced cauliflower or rice. Top with the remaining chopped green onions and any optional toppings like sesame seeds and hot sauce.
Notes
Store the chicken mixture in airtight containers in the fridge for up to 4 days or in the freezer for up to 2 months.
