French Onion Ground Beef and Rice Casserole

Description

A comforting casserole that combines ground beef, rice, and the rich flavors of French onion soup for a hearty family meal.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 2 large onions, sliced
  • 2 cups beef broth
  • 1 can (10.5 oz) French onion soup
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Optional: 1 tablespoon olive oil for cooking

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. In a large skillet, heat olive oil over medium heat and cook the sliced onions until caramelized, about 10 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  4. Stir in the uncooked rice, beef broth, and French onion soup. Bring to a simmer.
  5. Transfer the mixture to a greased casserole dish and cover with foil.
  6. Bake in the preheated oven for 45 minutes, or until the rice is tender.
  7. Remove the foil, sprinkle shredded cheese on top, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  8. Let it rest for 5 minutes before serving.

Notes

This casserole can be made ahead and refrigerated; just add 10 minutes to the baking time if starting from cold. For a vegetarian version, substitute ground beef with mushrooms.
