- 1 cup uncooked white rice
- 2 large onions, sliced
- 2 cups beef broth
- 1 can (10.5 oz) French onion soup
- 1 cup shredded cheese
- Salt and pepper to taste
- Optional: 1 tablespoon olive oil for cooking
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- In a large skillet, heat olive oil over medium heat and cook the sliced onions until caramelized, about 10 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the uncooked rice, beef broth, and French onion soup. Bring to a simmer.
- Transfer the mixture to a greased casserole dish and cover with foil.
- Bake in the preheated oven for 45 minutes, or until the rice is tender.
- Remove the foil, sprinkle shredded cheese on top, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Let it rest for 5 minutes before serving.
Notes
This casserole can be made ahead and refrigerated; just add 10 minutes to the baking time if starting from cold. For a vegetarian version, substitute ground beef with mushrooms.
