For the Crust:
- 1 package (14 oz) refrigerated pie crusts
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 4–5 ripe peaches, peeled and sliced
- 1/4 cup peach preserves, warmed
Instructions
1. Prepare the Crust:
- Preheat oven to 450Β°F (230Β°C). Unroll pie crusts and use a round cutter to create 8 circles. Press into a muffin tin to form small tart shells. Prick the bottoms with a fork and bake for 9-11 minutes or until golden. Let cool completely.
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spoon the cream cheese mixture evenly into the cooled tart shells. Arrange the fresh peach slices on top of the filling. Lightly brush the warm peach preserves over the peaches for a glossy finish. Chill for at least 30 minutes before serving.
