A tropical twist on classic cheesecake with fresh pineapple and creamy filling.
Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup crushed pineapple, drained
- 1/2 cup sour cream
Instructions
- Preheat oven to 325Β°F (163Β°C).
- Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla and eggs one at a time, mixing well.
- Fold in crushed pineapple and sour cream.
- Pour mixture over crust and bake for 60 minutes.
- Cool in oven with door ajar, then refrigerate for at least 4 hours.
Notes
For best results, use fresh pineapple and chill overnight.
