Description

Easy, fresh, and flavorful shrimp burrito bowls with rice, black beans, avocado, and a zesty sauce.


Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add shrimp, chili powder, cumin, salt, and pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.
  3. In serving bowls, layer cooked rice, black beans, cooked shrimp, avocado slices, cherry tomatoes, and cilantro.
  4. Squeeze lime wedges over the bowls before serving.

Notes

For a vegetarian version, substitute shrimp with grilled tofu or mushrooms.
