- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups cooked rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add shrimp, chili powder, cumin, salt, and pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.
- In serving bowls, layer cooked rice, black beans, cooked shrimp, avocado slices, cherry tomatoes, and cilantro.
- Squeeze lime wedges over the bowls before serving.
Notes
For a vegetarian version, substitute shrimp with grilled tofu or mushrooms.
