Description

Out-of-this-world cupcakes with a vibrant citrus flavor and a cosmic swirl of purple and blue frosting, topped with sparkling sugar for a stellar treat.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 tbsp milk (for frosting)
  • Purple and blue gel food coloring
  • Edible silver stars or sparkling sugar for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream together 1/2 cup butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon and lime zest and juice.
  3. Gradually mix in the dry ingredients alternately with the 1/2 cup milk, beating until just combined. Spoon batter into prepared liners, filling each about 2/3 full.
  4. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
  5. For the frosting, beat 1 cup butter until smooth. Gradually beat in powdered sugar and 2 tbsp milk until light and fluffy. Divide frosting into two bowls. Tint one portion purple and one blue.
  6. To frost, pipe or spread a layer of purple frosting on each cupcake. Then, add a swirl of blue frosting on top. Use a toothpick to gently swirl the colors together for a galaxy effect. Garnish with edible stars or sparkling sugar.
