- 1 pound sirloin steak, cut into 1-inch cubes
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 pound baby potatoes, halved
- 12 ounces green beans, trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Fresh herbs for garnish
Instructions
- Preheat your oven to 400Β°F (200Β°C).
- Toss the halved potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.
- While potatoes are roasting, heat a large skillet over medium-high heat. Add 1 tablespoon of butter and the steak bites. Sear for 2-3 minutes per side until browned.
- Add the minced garlic to the skillet with the steak and cook for another 1-2 minutes until fragrant.
- In the last 5 minutes of roasting the potatoes, add the green beans to the baking sheet and toss with the remaining olive oil, salt, and pepper.
- Once everything is cooked, combine the steak bites, roasted potatoes, and green beans in the skillet. Stir in the remaining butter until melted and everything is coated.
- Serve immediately, garnished with fresh herbs if desired.
Notes
For extra flavor, marinate the steak in garlic and herbs for 30 minutes before cooking. Ensure steak is at room temperature for even cooking.
