For the Crust:

  • 3 cups all-purpose flour
  • 3/4 cup dark brown sugar, packed
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 12 tbsp unsalted butter, softened
  • 3/4 cup molasses
  • 2 tbsp milk
  • 1 large egg

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour, ginger, cinnamon, cloves, salt, and baking soda. Set aside.
  2. In another bowl, beat the butter and brown sugar until light and fluffy. Beat in the molasses, milk, and egg until smooth.
  3. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 2 hours.
  4. Preheat oven to 350°F (175°C). On a floured surface, roll one disc of dough to 1/4-inch thickness. Use a gingerbread man cutter to cut out shapes.
  5. Place cookies 1 inch apart on a parchment-lined baking sheet. Bake for 8-10 minutes, or until edges are just set. Let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
