- 4 bone-in, skin-on chicken thighs
- 2 cups apple cider
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves, minced
- 1 onion, sliced
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add chicken thighs skin-side down and cook until golden brown, about 5 minutes per side.
- Remove chicken and set aside.
- In the same skillet, add onion and garlic, sauté until softened.
- Pour in apple cider and bring to a simmer.
- Return chicken to the skillet and add rosemary and thyme.
- Cover and cook for 20-25 minutes until chicken is cooked through.
- Stir in heavy cream and simmer for another 5 minutes to thicken the sauce.
- Serve hot.
Notes
For a lighter version, substitute heavy cream with coconut milk. Pair with roasted vegetables for a complete meal.
