For the Crust:
- 2 lbs Yukon Gold potatoes, scrubbed and diced into 1/2-inch cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large oven-safe skillet, toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Cook over medium-high heat for 10-12 minutes, stirring occasionally, until the potatoes start to brown and become slightly tender.
- Sprinkle the cheddar and Parmesan cheeses evenly over the potatoes. Transfer the skillet to the preheated oven.
- Bake for 15-18 minutes, or until the cheese is bubbly and golden brown and the potatoes are fully cooked through.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley and chives before serving.
