A simple yet delicious skillet dish of crispy, golden potatoes baked with melty cheese and fresh herbs.

For the Crust:

  • 2 lbs Yukon Gold potatoes, scrubbed and diced into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Cook over medium-high heat for 10-12 minutes, stirring occasionally, until the potatoes start to brown and become slightly tender.
  4. Sprinkle the cheddar and Parmesan cheeses evenly over the potatoes. Transfer the skillet to the preheated oven.
  5. Bake for 15-18 minutes, or until the cheese is bubbly and golden brown and the potatoes are fully cooked through.
  6. Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley and chives before serving.

Notes

You can customize the seasonings to taste.
