Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 24 caramel candies, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream butter and sugars until light and fluffy.
- Beat in egg and vanilla extract.
- Gradually add dry ingredients to the wet mixture and mix until combined.
- Scoop dough into balls, place a caramel candy in the center of each, and seal.
- Place on baking sheets and bake for 10-12 minutes.
- Cool on wire racks before serving.
Notes
For extra gooeyness, use soft caramels and avoid overbaking.
