Soft and gooey muffins filled with cinnamon and cream cheese for a delicious treat.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
- In another bowl, beat cream cheese until smooth.
- Add melted butter, eggs, milk, and vanilla to the cream cheese and mix well.
- Combine wet and dry ingredients, stirring until just mixed.
- Spoon batter into muffin liners, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack.
Notes
For extra gooeyness, add more cream cheese in the center before baking.
