  • Salt and pepper to taste
  • For Assembly:
  • 4 pita breads
  • 1 red onion, thinly sliced
  • 1 tomato, sliced
  • Lettuce leaves

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  2. Marinate the chicken: Add the chicken thighs to the marinade, cover, and refrigerate for at least 1 hour or overnight for best results.
  3. Cook the chicken: Preheat a grill or grill pan to medium-high heat. Grill the chicken for 6-8 minutes per side, or until fully cooked and juices run clear. Let rest for 5 minutes, then slice thinly.
  4. Make the tzatziki: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, olive oil, salt, and pepper. Mix well and refrigerate until ready to use.
  5. Assemble the gyros: Warm the pita breads on the grill for 1-2 minutes. Fill each pita with sliced chicken, tzatziki sauce, red onion, tomato, and lettuce leaves.
