Instructions
- Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
- Marinate the chicken: Add the chicken thighs to the marinade, cover, and refrigerate for at least 1 hour or overnight for best results.
- Cook the chicken: Preheat a grill or grill pan to medium-high heat. Grill the chicken for 6-8 minutes per side, or until fully cooked and juices run clear. Let rest for 5 minutes, then slice thinly.
- Make the tzatziki: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, olive oil, salt, and pepper. Mix well and refrigerate until ready to use.
- Assemble the gyros: Warm the pita breads on the grill for 1-2 minutes. Fill each pita with sliced chicken, tzatziki sauce, red onion, tomato, and lettuce leaves.
- Serve immediately: Enjoy your gyros with additional sides like fries or a Greek salad if desired.

For a vegetarian option, substitute chicken with grilled portobello mushrooms; ensure cucumber is well-drained to avoid watery tzatziki.
