Ingredients

  • 2 lbs boneless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red onion, sliced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • For the garlic sauce: 1/2 cup Greek yogurt, 2 garlic cloves minced, 1 tablespoon lemon juice, salt to taste

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  5. While the chicken is grilling, prepare the garlic sauce by mixing Greek yogurt, minced garlic, lemon juice, and salt in a small bowl.
  6. Assemble the bowls: Divide cooked rice or quinoa into bowls, add grilled chicken, sliced red onion, diced cucumber, halved cherry tomatoes, and crumbled feta.
  7. Drizzle the garlic sauce over the bowls and garnish with fresh dill.
  8. Serve immediately.

Notes

For a vegetarian option, substitute chicken with halloumi cheese or grilled vegetables. Ensure chicken reaches an internal temperature of 165Β°F.
