- 2 lbs boneless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 4 garlic cloves, minced

- 1 red onion, sliced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved

- 1 cup plain Greek yogurt

- For the garlic sauce: 1/2 cup Greek yogurt, 2 garlic cloves minced, 1 tablespoon lemon juice, salt to taste
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- While the chicken is grilling, prepare the garlic sauce by mixing Greek yogurt, minced garlic, lemon juice, and salt in a small bowl.
- Assemble the bowls: Divide cooked rice or quinoa into bowls, add grilled chicken, sliced red onion, diced cucumber, halved cherry tomatoes, and crumbled feta.
- Drizzle the garlic sauce over the bowls and garnish with fresh dill.
- Serve immediately.
Notes
For a vegetarian option, substitute chicken with halloumi cheese or grilled vegetables. Ensure chicken reaches an internal temperature of 165Β°F.
