  • 1 cucumber, thinly sliced
  • 1 red onion, finely chopped
  • 200g feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
  4. On a serving plate, begin layering with tomato slices at the base.
  5. Add a layer of cucumber slices on top of the tomatoes.
  6. Sprinkle chopped red onion and Kalamata olives over the layers.
  7. Crumble feta cheese generously over the top.
  8. Drizzle the dressing evenly over the salad tower.
  9. Serve immediately for the best freshness.
