Description

A traditional Greek salad featuring fresh vegetables, Kalamata olives, and feta cheese, dressed with olive oil and oregano.


Ingredients

  • 4 large tomatoes, cut into wedges
  • 1 English cucumber, halved lengthwise and sliced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, sliced into rings
  • 1 cup Kalamata olives
  • 200g feta cheese, cubed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the tomatoes, cucumber, onion, green bell pepper, and Kalamata olives.
  2. Arrange the feta cheese on top of the vegetables.
  3. Drizzle the extra virgin olive oil and red wine vinegar over the salad.
  4. Sprinkle with dried oregano, salt, and pepper.
  5. Toss gently to combine, and serve immediately.

Notes

Use ripe, fresh tomatoes for the best flavor; let the salad sit for a few minutes before serving to allow the flavors to meld.
