- 4 large tomatoes, cut into wedges
- 1 English cucumber, halved lengthwise and sliced
- 1 red onion, thinly sliced
- 1 green bell pepper, sliced into rings
- 1 cup Kalamata olives
- 200g feta cheese, cubed
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the tomatoes, cucumber, onion, green bell pepper, and Kalamata olives.
- Arrange the feta cheese on top of the vegetables.
- Drizzle the extra virgin olive oil and red wine vinegar over the salad.
- Sprinkle with dried oregano, salt, and pepper.
- Toss gently to combine, and serve immediately.
Notes
Use ripe, fresh tomatoes for the best flavor; let the salad sit for a few minutes before serving to allow the flavors to meld.
