- 2 boneless, skinless chicken breasts
- 1 ripe avocado, pitted and peeled
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Juice of 2 limes
- Salt and pepper to taste

Instructions
- Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, and minced garlic.
- Grill the chicken for 6-7 minutes per side, or until fully cooked through. Let it rest for 5 minutes, then slice into strips.
- In a blender, combine the avocado, lime juice, cilantro, and a pinch of salt. Blend until smooth to make the creamy avocado sauce.
- In a large bowl, assemble the mixed greens as the base. Add the grilled chicken strips, cherry tomatoes, cucumber slices, red bell pepper, and red onion.
- Drizzle the creamy avocado sauce over the top of the bowl.
- Toss gently to combine all ingredients and serve immediately.
