Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado, pitted and peeled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • Salt and pepper to taste
  • Mixed greens for the base

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, and minced garlic.
  2. Grill the chicken for 6-7 minutes per side, or until fully cooked through. Let it rest for 5 minutes, then slice into strips.
  3. In a blender, combine the avocado, lime juice, cilantro, and a pinch of salt. Blend until smooth to make the creamy avocado sauce.
  4. In a large bowl, assemble the mixed greens as the base. Add the grilled chicken strips, cherry tomatoes, cucumber slices, red bell pepper, and red onion.
  5. Drizzle the creamy avocado sauce over the top of the bowl.
  6. Toss gently to combine all ingredients and serve immediately.
