- 8 ounces penne pasta
- 2 boneless, skinless chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh basil leaves, torn
- 1/4 cup balsamic vinaigrette dressing
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions; drain and let cool.
- Grill the chicken breasts over medium heat for 6-8 minutes per side until fully cooked; slice into strips.
- In a large bowl, combine the cooled pasta, sliced chicken, cherry tomatoes, red onion, and basil.
- Drizzle with balsamic vinaigrette and toss to coat evenly.
- Season with salt and pepper, then chill in the refrigerator for 30 minutes before serving.
Notes
For a vegetarian version, substitute grilled tofu for chicken. Ensure chicken reaches an internal temperature of 165°F.
