Ingredients

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the Chicken: 4 boneless chicken thighs
  • For the Salad: 6 cups mixed greens
  • 1 red bell pepper, sliced
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • Fresh cilantro for garnish

Instructions

  1. Step 1: In a bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper to make the marinade.
  2. Step 2: Add the chicken thighs to the marinade and let them sit for at least 30 minutes.
  3. Step 3: Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side until cooked through.
  4. Step 4: Let the chicken rest for 5 minutes, then slice it into strips.
  5. Step 5: In a large salad bowl, combine mixed greens, sliced bell pepper, avocado, and red onion.
  6. Step 6: Top the salad with the grilled chicken strips and garnish with fresh cilantro.
  7. Step 7: Serve immediately, optionally with a side of lime wedges.

Notes

For extra spice, add jalapenos to the salad. Ensure chicken reaches an internal temperature of 165Β°F.
