Ingredients

- 1 pound large shrimp, peeled and deveined
- 1 cup canned coconut milk
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil for grilling
Instructions
- In a large bowl, whisk together coconut milk, lime juice, lime zest, garlic, cilantro, cumin, salt, and pepper.
- Add the shrimp to the marinade and toss to coat. Cover and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the shrimp onto skewers and brush with olive oil.
- Grill the shrimp for 2-3 minutes per side, or until pink and opaque.
- Remove from grill and let rest for 5 minutes before serving.
