Description

A flavorful grilled shrimp marinated in coconut milk, lime, and herbs, perfect for a quick summer meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup canned coconut milk
  • Juice and zest of 2 limes
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil for grilling

Instructions

  1. In a large bowl, whisk together coconut milk, lime juice, lime zest, garlic, cilantro, cumin, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Cover and refrigerate for 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the shrimp onto skewers and brush with olive oil.
  5. Grill the shrimp for 2-3 minutes per side, or until pink and opaque.
  6. Remove from grill and let rest for 5 minutes before serving.
