For the Crust:
- 12 fresh oysters in the shell, scrubbed clean
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- Lemon wedges, for serving
Instructions
1. Prepare the Crust:
- Preheat an outdoor grill to medium-high heat (about 375-400°F/190-200°C).
- In a medium bowl, combine the softened butter, minced garlic, Parmesan cheese, parsley, smoked paprika, and black pepper. Mix until well combined.
- Shuck the oysters, carefully prying the top shell off and loosening the oyster from the bottom shell. Discard the top shell and arrange the oysters on a baking sheet or grill-safe tray.
- Place a generous spoonful of the Parmesan-garlic butter mixture on top of each oyster.
- Carefully place the oysters directly on the grill grates. Close the lid and cook for 5-7 minutes, or until the butter is melted and bubbly and the oysters are cooked through.
- Using tongs, carefully remove the oysters from the grill. Serve immediately with lemon wedges on the side.
