Grilled Parmesan Garlic Oysters

Plump, juicy oysters are topped with a savory garlic-Parmesan butter and grilled to perfection for an elegant and easy appetizer.

For the Crust:

  • 12 fresh oysters in the shell, scrubbed clean
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving

Instructions

1. Prepare the Crust:

  1. Preheat an outdoor grill to medium-high heat (about 375-400°F/190-200°C).
  2. In a medium bowl, combine the softened butter, minced garlic, Parmesan cheese, parsley, smoked paprika, and black pepper. Mix until well combined.
  3. Shuck the oysters, carefully prying the top shell off and loosening the oyster from the bottom shell. Discard the top shell and arrange the oysters on a baking sheet or grill-safe tray.
  4. Place a generous spoonful of the Parmesan-garlic butter mixture on top of each oyster.
  5. Carefully place the oysters directly on the grill grates. Close the lid and cook for 5-7 minutes, or until the butter is melted and bubbly and the oysters are cooked through.
  6. Using tongs, carefully remove the oysters from the grill. Serve immediately with lemon wedges on the side.

You can customize the seasonings to taste.
