- 1.5 pounds chicken thighs, boneless and skinless, cut into 1-inch cubes
- 2 tablespoons Thai red curry paste
- 1 can (14 ounces) coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 1 red bell pepper, cut into chunks
- 1 onion, cut into chunks
- For the sauce: 1/2 cup peanut butter
- 1/2 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 teaspoon red pepper flakes
Instructions
- In a bowl, mix Thai red curry paste, coconut milk, fish sauce, soy sauce, and brown sugar to make the marinade.
- Add chicken cubes to the marinade and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Thread marinated chicken, bell pepper, and onion onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- For the sauce: In a saucepan, combine peanut butter, coconut milk, lime juice, soy sauce, and red pepper flakes; heat over low heat until smooth.
- Serve skewers with the warm peanut sauce on the side.
Notes
