Ingredients

  • 1.5 pounds chicken thighs, boneless and skinless, cut into 1-inch cubes
  • 2 tablespoons Thai red curry paste
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 1 red bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • For the sauce: 1/2 cup peanut butter
  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon red pepper flakes

Instructions

  1. In a bowl, mix Thai red curry paste, coconut milk, fish sauce, soy sauce, and brown sugar to make the marinade.
  2. Add chicken cubes to the marinade and refrigerate for at least 1 hour.
  3. Preheat grill to medium-high heat.
  4. Thread marinated chicken, bell pepper, and onion onto skewers.
  5. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
  6. For the sauce: In a saucepan, combine peanut butter, coconut milk, lime juice, soy sauce, and red pepper flakes; heat over low heat until smooth.
  7. Serve skewers with the warm peanut sauce on the side.

Notes

Ensure chicken is fully cooked to avoid foodborne illness. Adjust spice levels to taste.
