- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup chopped nuts
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, applesauce, chopped nuts, cinnamon, and vanilla extract to the bowl and mix well.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet.
- Bake for 15-20 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
These cookies are best stored in an airtight container in the refrigerator for up to 5 days. Feel free to add seeds or dried fruits for variation.
