A hearty breakfast casserole made with crispy hashbrowns, eggs, cheese, and sausage, perfect for feeding a crowd.

- 1 package (30 oz) frozen shredded hash browns, thawed
- 1 pound ground sausage
- 8 large eggs
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 onion, diced
- Salt and pepper to taste
Instructions
- Preheat oven to 350Β°F (175Β°C).
- Cook sausage in a skillet over medium heat until browned; drain excess fat.
- In a large bowl, mix hash browns, sausage, onions, and half the cheese.
- In another bowl, whisk eggs, milk, salt, and pepper; pour over hash brown mixture.
- Transfer to a greased baking dish and top with remaining cheese.
- Bake for 45-50 minutes until golden and set.
Notes
Make ahead and refrigerate overnight for easier mornings. Serve with fresh fruit.
