Description

A hearty breakfast casserole made with crispy hashbrowns, eggs, cheese, and sausage, perfect for feeding a crowd.


Ingredients

  • 1 package (30 oz) frozen shredded hash browns, thawed
  • 1 pound ground sausage
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. Cook sausage in a skillet over medium heat until browned; drain excess fat.
  3. In a large bowl, mix hash browns, sausage, onions, and half the cheese.
  4. In another bowl, whisk eggs, milk, salt, and pepper; pour over hash brown mixture.
  5. Transfer to a greased baking dish and top with remaining cheese.
  6. Bake for 45-50 minutes until golden and set.

Notes

Make ahead and refrigerate overnight for easier mornings. Serve with fresh fruit.
