Ingredients

  • 1 lb (450g) lean ground beef
  • 2 bell peppers (red and yellow), sliced
  • 2 cups cooked brown rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook brown rice according to package instructions and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onion and minced garlic, sauté for 2-3 minutes until fragrant.
  4. Add lean ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  5. Stir in sliced bell peppers, paprika, salt, and pepper. Cook for another 4-5 minutes until peppers are tender.
  6. Pour in low-sodium soy sauce and stir to combine.
  7. Serve the beef and pepper mixture over cooked brown rice, garnished with fresh parsley.
