- 2 bell peppers (red and yellow), sliced
- 2 cups cooked brown rice
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Cook brown rice according to package instructions and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic, sauté for 2-3 minutes until fragrant.
- Add lean ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Stir in sliced bell peppers, paprika, salt, and pepper. Cook for another 4-5 minutes until peppers are tender.
- Pour in low-sodium soy sauce and stir to combine.
- Serve the beef and pepper mixture over cooked brown rice, garnished with fresh parsley.
