Description

A wholesome and tasty rice bowl featuring tender lean beef stir-fried with colorful bell peppers, served over fluffy brown rice for a balanced meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean beef strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 cups cooked brown rice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef strips and cook until browned, about 4-5 minutes. Remove from skillet and set aside.
  3. In the same skillet, add onion and bell peppers. Sauté for 5 minutes until softened.
  4. Add garlic and cook for 1 minute.
  5. Return beef to skillet, then stir in soy sauce and sesame oil. Cook for another 2-3 minutes.
  6. Serve over cooked brown rice and garnish with parsley if desired.

Notes

Use low-sodium soy sauce to keep it heart-healthy. Adjust seasonings to taste. Leftovers can be stored in the fridge for up to 3 days.
