Ingredients

- 1 lb lean beef sirloin, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups brown rice, cooked
- 2 tbsp low-sodium soy sauce
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add beef and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add garlic and ginger, sauté for 1 minute.
- Add sliced bell peppers and stir-fry for 4-5 minutes until crisp-tender.
- Return beef to the skillet and add soy sauce. Cook for 2 more minutes.
- Serve over cooked brown rice and garnish with cilantro if desired.
Notes
For a lower-carb option, substitute brown rice with cauliflower rice. Ensure beef is thinly sliced for even cooking.
