Ingredients

- 1 lb lean ground beef
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cups cooked brown rice
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp ginger, grated
- Salt and pepper to taste
- 1 tbsp sesame seeds (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté for 2-3 minutes until softened.
- Add ground beef and cook until browned, about 5-7 minutes.
- Stir in sliced bell peppers, ginger, and soy sauce. Cook for another 5 minutes until peppers are tender.
- Serve over steamed brown rice, sprinkle with sesame seeds if desired.
Notes
For added nutrition, use low-sodium soy sauce. Adjust seasoning to taste.
