- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted coconut oil
- Filling:
- 2 cups low-fat Greek yogurt
- 1 cup low-fat cream cheese
- 1/2 cup honey
- 2 eggs
- 1 tsp vanilla extract
- Zest of 1 lemon
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted coconut oil until combined. Press into the bottom of a springform pan.
- In a separate bowl, beat Greek yogurt and cream cheese until smooth. Add honey, eggs, vanilla extract, and lemon zest, mixing well.
- Pour the filling over the crust and smooth the top.
- Bake for 40-45 minutes or until set. Let cool, then refrigerate for at least 4 hours before serving.
Notes
For best results, use organic ingredients and serve chilled. This recipe is gluten-free if using gluten-free crackers.
