For the Crust:

  • For the Meatballs: 1 lb ground chicken
  • 1/2 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup finely crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • For the Tzatziki: 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 small garlic clove, minced
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine all meatball ingredients: ground chicken, panko, egg, feta, parsley, oregano, garlic powder, salt, and pepper. Mix gently with your hands until just combined.
  3. Form the mixture into 1-inch meatballs (about 20-24) and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through and golden brown.
  5. While the meatballs bake, make the tzatziki. In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, and salt. Stir well to combine. Refrigerate until ready to serve.
  6. Serve the warm meatballs with the cool tzatziki sauce for dipping or drizzling.
