Description

A quick and healthy stir fry combining zucchini and beef for a nutritious meal.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 lb lean beef, cut into strips
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and onion, stir fry until fragrant, about 2 minutes.
  3. Add beef strips and cook until browned, about 5 minutes.
  4. Add sliced zucchinis and soy sauce, stir fry for another 5-7 minutes until zucchini is tender-crisp.
  5. Season with salt and pepper, and serve immediately.
