Ingredients

- 2 medium zucchinis, sliced
- 1 lb lean beef, cut into strips
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and onion, stir fry until fragrant, about 2 minutes.
- Add beef strips and cook until browned, about 5 minutes.
- Add sliced zucchinis and soy sauce, stir fry for another 5-7 minutes until zucchini is tender-crisp.
- Season with salt and pepper, and serve immediately.
