Description

A flavorful meatloaf glazed with herbs and paired with roasted vegetables for a hearty meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tbsp chopped fresh herbs (such as thyme and rosemary)
  • 1/4 cup glaze (mix of honey and mustard)
  • 2 cups mixed vegetables (carrots, potatoes, and bell peppers)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, mix ground beef, breadcrumbs, egg, herbs, salt, and pepper.
  3. Shape the mixture into a loaf and place in a baking dish.
  4. Brush the glaze over the meatloaf.
  5. Toss vegetables with olive oil, salt, and pepper, and arrange around the meatloaf.
  6. Bake for 45-50 minutes or until the meatloaf is cooked through.
  7. Let rest for 10 minutes before slicing.
