Ingredients

- 1/2 cup breadcrumbs
- 1 egg

- 2 cups mixed vegetables (carrots, potatoes, and bell peppers)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a bowl, mix ground beef, breadcrumbs, egg, herbs, salt, and pepper.
- Shape the mixture into a loaf and place in a baking dish.
- Brush the glaze over the meatloaf.
- Toss vegetables with olive oil, salt, and pepper, and arrange around the meatloaf.
- Bake for 45-50 minutes or until the meatloaf is cooked through.
- Let rest for 10 minutes before slicing.
